Pistachio Nut Cupcake Cones
(For all the Squirrels, Chipmunks, and any Furry who likes nuts in their mouth.)
**Easy Difficulty**
Serves 24 with some batter left over
1 box of white Cake Mix (Preferred Brand)
1 (3.4 ounce) package instant Pistachio Pudding
1 (24 Count) box of normal sized flat bottom Ice Cream Cones
1 container of Frosting (Preferred Flavor)
1 cup Vegetable Oil
3 large Eggs
1 cup Club soda
1 cup coarsely chopped Pistachios
(optional) Sprinkles, candies, or other sweets for decoration
1) Preheat oven to 350 degrees F. And place Ice Cream cones in a cupcake pan.
2) Mix Cake mix, Eggs, Oil, Pistachio Pudding mix, chopped Pistachios, and Club soda in a large bowl and beat for 3 minutes.
3) Pour batter into Ice Cream Cones about 2/3 of the way full and bake until a wooden toothpick comes out clean (about 18-22 min.) Cool cupcakes completely.
4) Frost cooled cupcakes and decorate.
5) Enjoy nuts in your mouth.
Extra Info: My boyfriend likes nuts in his mouth so I made him some pistachio cupcakes. Then I decided to try them out with the Cone method. This is what came out! I normally use store bought cake mix, but normally make my own frosting but this version uses bought frosting for simplicity. For contrast, use any flavor and color frosting, and/or cone flavor or color you like.
Happy Eating!
