this was the first weeks breakfast.
oddly most other meal prep recipies are set up for 5 days but these breakfast bakes are set for six.
this ones a savory moring meal that did fill us all up

Sausage Egg and Cheese Savory Baked Oatmeal
Calories: 569kcal | Carbohydrates: 46g | Protein: 36g | Fat: 27g | Fiber: 7.8g
Ingredients
For the Sausage
1 lb ground pork 90/10 any ground meat is okay
1 tbsp brown sugar
1 tsp salt
1 tsp pepper
1 tsp cayenne pepper optional for spice
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
1½ tsp rubbed sage
1 tbsp oil
For the Oatmeal
3 cups old fashioned oats
½ cup oat flour any flour is fine
2 eggs
2 cups 2% milk
1 cup cottage cheese
1 cup shredded cheddar cheese
1 tsp baking powder
½ tsp salt
1 medium green pepper
1 small onion
1 tbsp oil
Instructions
For the Breakfast Sausage and Peppers
1 In a large bowl add the pork with all of the associated seasonings. Mix thoroughly to incorporate into the meat.
2 In a large skillet over medium high heat, add 1 tbsp of oil and add in the sausage. Brown it on both sides and cook it until no pink color remains. Be careful not to burn the sugars.
3 Break up the sausage into small pieces as it cooks and set aside until you are ready for it later.
4 While the sausage is cooking cut your onion and pepper into a small dice. Once the sausage has finished, remove it from the pan and add another 1 tbsp of oil. Add the onions and peppers and cook for a few minutes to develop color. Season lightly with salt.
For the Baked Oatmeal
1 Preheat your oven to 375 °F (191 °C).
2 In a large bowl, beat 2 eggs, add the milk and cottage cheese and mix together.
3 Next add in the oats, flour, baking powder, salt, sausage and peppers, and cheddar cheese. Mix to combine.
4 Spray a 13"x9" pan with oil and add the oat mixture. Spread evenly across the pan.
5 Bake for 40-45 minutes or until set in the center.
since this makes 6 servings cut into six equal portions
belive it or not the grocery story was out of green peppers so I used a yellow and a red
these are a little dry but not bad my boy fox liked his with hot sauce but he likes everything with hotsauce I myself added just a squirt of bbq to mine
