The stuff they put in the soup is simply cartilage. In terms of both taste and consistence you could easily replace it with gelatine and no one would sense the difference.

I wanna but some shark plushies, it's a shame they're hard to find here, but if I find I'll buy a complete pack (tiger shark and blacktip reef shark are top on my list )
And yeah, sharks are interesting creatures. I've heard that they're the most intelligent sea animals, and only few of them (less than 10 out of almost 100 species) are actually dangerous. They don't eat humans, they confuse people with seals, this is why some sharks do attack people.

Actually, last I updated myself with shark information, I believe only 3 types of sharks have proven to be really dangerous to humans (not counting sub species or hybrids or anything). Bull, Tiger, and Great White... and yes, even then their bites are usually just results of mistaken humans for their usual prey or just an investigative bite because they had no idea what bumped into their nose.
Honestly, in the ocean, I'm more afraid of salt water crocs coming after me than any kind of shark. =w=;
