what i normally do when im dealing with feta at work is to let it sit out on a tray pan or something tilt it a bit and let what juices the block or chunk has in it flow out until the chunk is dry then shred the feta by hand into a container or onto the food its going on.

Yeah, I know, I had to deal with huge bricks of feta every day in a kitchen job, before. If you want good cheese, it has to come in the largest most unwieldy block possible. Wash your hands and then just rip it in half over the container (place one of the halves back into the feta's original box, each time you tear it in two), then halve one of those blocks until have a comfortable (maybe fist-sized or a bit smaller) block you can start to crumble up into a container you'll be storing it in. You might need a few containers to contain all the useable feta-chunks you create, or you can leave the other, bigger blocks together in the original feta product container with the feta-water (or whatever you call the liquid in there. The CheesePond?), if it's re-sealable.
Or only crumble what you need for whatever you're making at the moment. I'm used to the idea that one would crumble it ALL to have it all on hand for a restaurant kitchen.

Cheesewire is a thin piece of strong wire with a wooden handle on each end. The narrowness of the wire means when you push the handles down either-side of the cheese, it cuts through very easily as the force of two hands is applied to a very small surface area.

Oh, by the way, I used a knife the size of a machete on the cheddar where I worked, too!
This knife was like a scimitar, in that it was curved. Unlike a scimitar, though, it was meant for cutting fully across pizzas. One would see-saw the blade across the freshly baked pizza a few times to slice it into the requisite number of slices. But yeah, when dealing with cheese, you would get up on a stool to stand above the 20-30 pound, two-foot by one foot by 8 inch block of cheese (which would be on the counter), and put all your weight on it to cut it down to size.
I usually find getting the tubs that have small 2-3 blocks in them help out a lot. Then again I'm a gigantic wuss who makes other folks break it up for me. XD

Hmmmm. *pokes knife* Such shoddy construction. They should have used more rivets to prevent a catastrophic break.
Full-handled is better. Even if you don't have rivets, it adds to the strength of the handle, thus preventing such breaks.

Hmmm. I humbly suggest investing in an inexpensive (but not too inexpensive) knife with a tang that you can see all the way to the end of the handle. Molded plastic handles are usually cheaply made, and when they inevitably break you can lose a lot more than just the knife...
Yeah, definitely a lesson well learned. X_X Thanks for the advice on the knife -- I'll keep that in mind for sure. I was using a cheap steak knife and I was pretty lucky that the blade just broke through the handle instead of breaking through some part of ME.
Just use the whole block. Feta's delicious so more feta must be more delicious, right?!

I had a set of those cheap knives.. I have one left, only because it's serrated and I am jsut waiting for it to break too. I replaced them with solid metal knives I found at a yard Sale. it' ain't the cheese. it's the tools XD

This may sound stupid but have you thought of putting it in the microwave? Just a few seconds on low power usually softens it up, at least from my experience :)

The bacterial growth shouldn't be any more severe than having it in the open while you cut it, that is as long as you don't overdo it in the microwave itself, my boyfriend once managed to put a whole block in for a whole minute and after that put it back into the fridge while still warm...it was a mess D:
No, really just a few seconds should be fine and it shouldn't take too long to soften up a little bit :)

It's tasty and fairly lightly flavored but very salty and somewhat tangy.
And when you are naked in the kitchen you are supposed to wear an apron! :P

XD crappy silverware am I right? I had that same thing happen….broke five knives thanks to cheese being all hard to cut.

i made my own hot nife to cut through that feta cheese so that it melts and makes a nice gooey delicious mess on the knife but sad part is i gotta wait to lick of that delicious gooey stuff off the knife after its cooled down.
