Only thing I've seen Coyotes refuse to touch were at type of fish called Alligator Gar - Carp they would eat but not the Gar.. Used to Bow Fish for them - harpoon arrow and heavy line.

Only folks I'd ever heard of eating the things were the old Native tribes of the region and some of the French settlers of Louisiana . I used to encounter several Southeast Asian refugee families fishing for carp when I was bow fishing. They gladly took all the carp I was getting with the arrow and line.
