One of my fave dishes to make at home.
Recipe from The Everyday Gourmet: The Joy of Mediterranean Cooking, by Chef-Instructor Bill Briwa of The Culinary Institute of America
Ingredients
1 Tablespoon curry powder
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/2 teaspoon paprika
1/2 teaspoon coriander
Bamboo skewers, soaked, as needed
2 pounds pork tenderloin, trimmed cut 1 inch x 1 inch
1/2 pound grapes, flame seedless
1/4 cup olive oil
1/4 orange juice
1/4 lemon juice
2 heads of garlic, minced
salt & pepper, to taste
2 Tablespoons Italian parsley, chopped coarse
Instructions (word for word from the book)
To make this dish, the first step is to make a marinade for the pork. This marinade is distinctive because it contains exotic spices, including curry powder, cumin, cinnamon, paprika, and coriander. Add garlic to the spice mixture, along with orange juice, lemon juice, and olive oil. Add salt & pepper to taste. Stir all these ingredients together.
Then, put the marinade on the pork. Start by skewering a piece of pork tenderloin, which is a very tender cut of meat. Then, put a grape on the skewer, followed by another piece of meat, and continue alternating like this until all your skewers are full.
Spoon the marinade on top of the skewers, and let them sit in the marinade for 20-30 minutes. Once the meat has marinated, you're going to cook it. Place the skewers on a hot grill. Once the skewers are cooked all the way through and have some nice browning on them, turn off the heat of the grill.
Grilling Tip: When you're grilling meat on skewers, often the meat will stick to the grill initially. Do not try to wrestle it free; instead, just let it sit and cook a little bit. As it cooks, some of the fat in the meat will rise to the surface of the meat, and the meat fibers will constrict, or pull back. As they do, they will pull themselves free of the grill, and then you should be able to turn the skewers pretty easily.
A rustic dish like this benefits from some coarsely chopped parsley. When you're ready to serve the skewers, put a little bit of chopped parsley on top of the skewers, along with a drizzle of fresh lemon juice.
