This recipe can be made with the overabundance of zucchini or cucumbers you probably have or even a combination of the two however for the purpose of this recipe we will be discussing cucumbers, you can use whatever type of onion you like for this relish but red onions add a lovely color makes approximately eight half pint jars
6 pounds of finely chopped pickling cucumbers
1/2cup canning salt
2 teaspoons ground turmeric
3 cups water
2 large onions finely chopped
4 cloves finely minced garlic
2 tablespoons dill seed (I use dehydrated dill All I had)
3 cups white vinegar
1 please chopped cucumbers in a glass bowl sprinkle with salt and turmeric and cover with water for 2 hours this will help to draw the liquid out of your cucumbers so that your relish isn't runny
2 drain cucumbers and rinse under cold water in a colander squeeze out the excess water with your hands
3 combine cucumbers onion garlic salt dill seed and vinegar and a saucepan and bring to a boil
4 reduce heat and simmer 10 minutes
5 ladle into jars leaving half inch of headspace
6 process in water bath canner for 15 minutes adjust for altitude
Jalapeno relish
Makes approximately eight half pint jars
5 pounds finely chopped jalapenos
2 cups sugar4 cups vinegar
1/2 cup cilantro leaves optional
(I cut mine with cucumber to fill my jar lol)
1 in a food processor finally chop the peppers Don't turn them into a puree mush Make them the consistency of relish 2 in a large pot stir the sugar into the vinegar bring to a boil immediately turn off the heat once boil is achieved
3 use your food processor to chop up the cilantro leaves if you are using them then stir them into chopped peppers
4 ladle the uncooked peppers and cilantro into your canning jars then spoon the liquid over to make sure allowing half inch of headspace
5 process the jars in the water bath canner for 10 minutes adjusting for altitude
