Finally got a chance to cook for myself, so best hold onto your butts! :p
Ingredients:
1 cup cousous
1 onion, chopped
1 - 1 1/2 cloves garlic (used jarred)
1 tablespoon olive oil
1 1/2 cups chicken stock (the box calls for water, but to me that's just too plain)
salt and pepper to taste
zest from one lemon
Just get a big saucepan, and put in your olive oil
Then get the temperature to high, and toast your couscous to light brown
Then add in the onions and garlic, sauté to translucent
Add in your water / stock and let boil for 6 - 8 minutes, covered
Then take off the heat when done and add in the lemon zest at the finish (it'll suck up that water pretty quick) and cover until ready to serve!
That zest will make a great 'pop' to this dish, hope you enjoy!
