I guess Sully is whatever he wants to be. He changed into a skunk at first, but lately he's been a caribou more often than anything else. Maybe it has something to do with that nice city feller he met. Wonder what happened to him?
Whatever his species, Sully appears to have stronger morphic resonance than Emmet: he always retains his ferret mask, his ear notch, and even his fangs. Perhaps that relates to why Emmet is finding it so much harder to change out of his form. Sully just has more... selfness than Emmet does. He could turn into a pool toy and still feel like himself.

I have a feeling emmet is stuck as a roo till someone helps him leap out of his prior form back to wombat form... could it be his diet? He has a strong attachment to food. Maybe his form and body are telling him something.

Emmet doesn't have any "hard" addictions, but he does seem to have an addictive personality. Whether it's food, or booze, or his own work, he always needs something to bury himself in. He's clearly not in control of himself, or comfortable with his own being. If you locked him in a room with nothing to do and no company but his thoughts, he'd probably immediately go crazy.
Sully, on the other hand, is so comfortable with himself that he can radically shift his form and it doesn't faze him. Sully also did have a nicotine addiction, but he quit the habit remarkably quickly. What crutches he has he casts away easily.
Emmet has likely "coped" with his new form in the worst ways possible—by digging into all of his habits. If think you're probably right on the money. If you can't make peace with yourself, you can never change yourself.
