Timeless: Cutting Up Triptych

As winter sets in, a specific number of goats are slaughtered in anticipation of the changing season. Heavy with summer fat, this period proves optimal for their slaughter. A portion of the meat is sun and wind dried for preservation, while the remainder is stored frozen within snow-dug pits throughout the Bone Season. The frigid winter temperatures ensure their preservation until the snow recedes.
This meat reserve sustains the clansmen who remain in the winter camp, supplying them with food while the bulk of the herds are migrated to more hospitable climates.
Before the animals meet their fate, the Varanar feed and offer a brief prayer, expressing gratitude for the life the animals provide in exchange for sustenance.
The preferred way of killing certain small and medium-sized livestock for Turvao Varanar is through a forceful but precise blow at the back of the head, ensuring quick and instant death. Livestock suffering is taboo to Turvao, as is blood spilling. A correct kill should be clean, and all blood should be collected to be consumed.
Turvao Varanar believe in reincarnation. To them, the final stage of reincarnation is to return as Varanar. Once the spirit reincarnates in the form of Varanar, after its final death, it remains in the Yondehinn (Spirit World) and does not return to the Varoehinn (Mortal World).
The only exception is for children who have not learned to walk yet. In those cases, it is believed that the children will return as horses - creatures considered siblings to the Turvao - because horses walk and run on the same day they are born.
Here, Vygo has killed the goat and marked its forehead with its own blood, after making a small incision in the goat's belly to begin the butchering process. With a prayer, Vygo wishes the goat will return as Varanar.

I absolutely love the lore behind this and the world building! Incredible!! And such beautiful artwork too!
Oh, here's my answer from the question on the other image! Very cool!
absolutely beautiful stuff it really shows the hard stuff it takes to survive in a hard land at a hard time
This aspect of herd care and harvesting makes me wonder: How long do goats take to go from babies to fully grown and butcherable? A year or two?
And, when it comes to making new baby goats, I wonder if the Varanar just let the herd do that on their own, or maybe they try to pick certain goats for mating/husbandry.. but there's so many! *thinking about the goatpocalyse images @__@ *
