This is such a nice moment, doing this before the special blow and the butchering. Although, when you really think about it, it's more about calming the heart and mind of the Varanar who has to do the deed, ending the life of what might be a somewhat cherished animal.
I wonder if there's ever a special 'last treat' given to the goat, in a moment like this. Your post on the main triptych mentions they get fed one last time, but maybe there's some special thing they give them in this 'last meal' moment.
Goats eat grass, but they also eat flowers, I think? Perhaps there's one unique type of flower they save, to give them now. Some final gift as thanks.. and the flower itself could have some special significance in their culture as well. A plant that has to do with life and death or rebirth - and if it had a bit of a numbing quality when eaten, then it might even soften the killing blow to the back of the head.
